Anchovies from the Cantabrian Sea are the best in the world because they are very thick, tasty and pulpy. In fact, the well-oxygenated and cold water causes the fish to develop a greater layer of fat, which particularly affects their final taste and size.
The anchovies of the Cantábrico Sea are common anchovies of the species Engraulis encrasicolus that live in the Cantabrian Sea, that stretch of coast of the Atlantic ocean that bathes the north of Spain and the south-west coast of France.
This sea is a sea of passage between the cold northern and temperate seas and therefore hosts many marine plant and animal species.
