Taste: intensely fruity, fresh, grassy, pungent, complex. Decisively bitter and peppery, harmonious, elegant and well structured, with a fresh rich finish of spicy grass.
Use: perfect on blue-fish appetizers, Chianina meat carpaccio, tuna salad, legume soups, first courses with ragù, blue-fish stew, pumpkin based dishes, roasted red meats or game, mature cheese. Excellent for bruschetta, pinzimonio, tomato salads, boiled potatoes, with plain rice or pasta.
